Method
Preheat & Prepare:
- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.
Season the Potatoes:
- In a bowl, toss the potatoes with olive oil, garlic, oregano, thyme, salt, and black pepper. Spread them evenly on one side of the baking sheet.
Season the Chicken:
- In the same bowl, coat the chicken breasts with olive oil, garlic, smoked paprika, oregano, thyme, salt, and black pepper.
- Place the chicken on the other side of the baking sheet.
Add Parmesan & Bake:
- Sprinkle Parmesan cheese over both the chicken and potatoes.
- Bake for 25 minutes, then flip the chicken and stir the potatoes.
Finish Cooking & Serve:
- Continue baking for another 10–15 minutes, or until the chicken reaches 165°F (75°C) internally and the potatoes are golden.
- Sprinkle with fresh parsley and serve with lemon wedges if desired.
Notes
- For extra crispy potatoes, broil for 2–3 minutes at the end of baking.
- Swap chicken breasts for thighs for a juicier result.
- Add extra veggies like broccoli or bell peppers for a complete meal.
- Store leftovers in an airtight container for up to 4 days.
