Method
- Preheat oven to 375°F. Grease a 9×13-inch dish.
- Mix filling: Combine peaches, sugar, cornstarch, and lemon juice. Set aside.
- Beat egg whites to stiff peaks. Set aside.
- Make crust: Mix flour, sugar, baking powder, yolks, and butter. Fold in egg whites gently.
- Assemble: Pour fruit into dish. Spread crust batter on top.
- Bake for 45 minutes, until golden and bubbling.
- Cool 10 minutes, then serve warm.
